For the best results the duck must be thoroughly dried before it is marinated with a special mix of spices and herbs. The actual firing is done in a specially built roasting furnace, which distribute the heat evenly around the ducks body, resulting into a golden crispy outer skin. Roast duck must be eaten while it is warm, before the skin is softened by the moisture in the air.
